Potato and herring salad


This is a very fast and easy meal for very busy weeknights. Or a wonderful way to use up any canned fish in tomato sauce you might have on hand. It's not the average potato salad (it's much more leafy), but more like a criss-cross between various salad styles. It contains boiled potatoes smothered in tomato sauce flavored with a drop of Teriyaki (or Tabasco) and fish and flavorful artichoke hearts (canned as well). You may as well call it "Potato salad alla putanesca", like the famous pasta, given how most of the ingredients are salty and robust and conveniently canned. To keep this short, this was a lovely and very delicious salad and you should try it asap. :)

Ingredients (serves 2):

  • 400 g potatoes
  • 100 g herring in tomato sauce (ours was a tomato-cranberry sauce, so variations are welcome)
  • 2 extra tablespoons of tomato sauce
  • 1 tablespoons Teriyaki sauce (or 1/2 teaspoon of Tabasco)
  • 100 g artichoke hearts from the can (ours were canned in herb oil, but in water should do just as fine)
  • 1 teaspoon olive oil
  • 75-100 g mixed salad leaves


Start by peeling the potatoes:

Cut them into rustic chunks and put them in salted water to boil until they're done. Meanwhile open the fish can and put all its contents in the main salad bowl. Cut the fish fillets into bite-sized pieces:

Also add the extra tomato sauce and Teriyaki (or Tabasco). When the potatoes are boiled add them too:

Mix well, chop up the artichoke hearts and add them too:

Also add the salad leaves and oil and mix again. The salad's done, dig in! :)
