Pork bites in sweet and sour sauce (Thai-style)


This was a Thai-inspired sauce for the little pork bits based on lime, ginger, coconut and spices. It tastes hot but fresh and creamy but light. It truly was delicious, even for me (not being a big pork fan). Enjoy :)

Last year: Teriyaki salmon fillets, Mushroom, pickled cucumber and cheese salad, Danish pastries with strawberry and cream cheese filling and Green pasta with Jamon serrano, Parmesan, mozzarella and olives.



Ingredients (serves 2):
  • 300 g lean pork muscle
  • 4 tablespoons creamy coconut milk
  • 1 lime
  • 1/2 teaspoon lemongrass powder
  • 1/2 teaspoon piri piri flakes
  • 1/2 teaspoon cumin powder
  • 1 tablespoon herbal liquor (like Jagermeister)
  • 1 tablespoon olive oil
  • salt and pepper to taste


Cut the pork meat into cubes and put it in a frying pan. Add the olive oil, salt and pepper and start frying it on low heat:

Slice the lime for 2 slices, then squeeze the juice and coarsely grate the zest from the rest. When the meat looks fried all over, add the liquor. Stir until it evaporates. Then add the rest of the spices, the lime juice and zest and the coconut milk:

Stir some more and cook for another 4-5 minutes until the sauce comes together. Transfer to serving plates and decorate each with a reserved lime slice. It's ready, dig in! :)
